Garlic & Carrot Hummus

One of the ways we keep the kiddo involved in our lifestyle is by including her in preparing healthy foods. These foods include a great garlic and carrot hummus. Check out the easy recipe below.


1 full size carrot

1 to 2 cloves of garlic

1 tbsp tahini – optional

2 can of garbanzo beans *

½ cup of olive oil

½ tsp salt

*I highly recommend using Eden Organic brand, their cans DO NOT have BPA

Note we use a Vitamix to blend, I’m sure a food processor or a high-end blender can do the job.


First pop the carrot in the food processor. Depending on your machine you may need to chop it up a bit beforehand. The goal is to mince the carrot. Then throw in the cloves of garlic. The number of cloves you put in depends on how much you like garlic…we do 2. Blend those two ingredients together. Stop the machine. (I have to include this note; my man lost a spatula by not turning the machine off) Now open the garbanzo beans, drain and rinse them. Once you’re done cleaning the beans you can put them into the processor with the tahini and the olive oil. Get all that goodness mixed up well. Stop the machine. Add the salt for taste. Blend well.

Now enjoy your hummus and hopefully some good company :)
